Distillerie de Labourdonnais is set in a beautiful estate amidst orchards and sugar cane fields in the north of Mauritius.

This little pearl in the Indian Ocean has a rich rum-making tradition.
A lot of industrial rum is being produced in Mauritius, but three traditional craft distilleries continue the French tradition producing distinctive and refined rums from pure sugarcane juice.

Labourdonnais was founded in 2006 as a resurrection of the old 'Rhumerie des Mascareignes'.
The youngest of the artisanal distilleries, it combines the most modern techniques with tradition and know-how.

Labourdonnais Rums are a perfect reflection of Mauritius. Very accessible, extraordinarily diverse and paradisiacal !

 

Sugar cane is harvested and collected to make fresh cane sugar juice. The fresh cane juice is filtered to remove any small fibres. Then yeast is added to the juice and kept in the yeast tank for 44 hours. Meanwhile, air is continuously pumped into the mixture and a rich yeast culture is formed.

Once the desired yeast concentration is reached, part of the mixture is transferred to the fermentation tank and fresh juice is added. The fermentation process takes 35 hours with constant control of parameters such as temperature and pH.

The next step is distillation. The distillation column has a total of 39 trays, 20 in the stripping section, 15 in the rectifying section and 4 in the degassing section. The fermented juice or wine enters the column at the top of the stripping column while steam is injected at its base. The rising steam evaporates the volatile substances present in the wine, which consist mainly of ethanol.

The desired distillate is collected in three different trays in the rectifying section. The lowest tray will contain a heavy distillate, while the highest tray will have a lighter distillate. The final product coming leaves the column, passes through a condenser and is collected in 25.000 litre stainless steel tanks. Depending demand, annual production ranges from 150.000 to 200.000 litres of rum with an alcohol volume of 89%.

Prior to being processed, the rum rests in tanks for a minimum of 6 months. Only then the rum will be used to produce the Labourdonnais end products.

Distillerie de Labourdonnais offers 3 product categories: Prestige, Classic and Fuzion.


Prestige Range:

 

-       Gentlemen is a Single Cask golden rum of 42% abv that has matured 9 years in a new french oak cask.

-       Amélia matures 2 years in Ruby Port casks, after which home-grown vanilla Tahitensis is added for a 2-month maceration.

-       1774 is a VS rum aged for 2 years in old Cognac and after that infused during 2 months with Calamondin orange, vanilla and a touch of homemade sugar syrup.


The prestige rums are aged in special casks and bottled in the Labourdonnais cellars.

Classic-Range:

 

-       Classic is a white rum of 40% abv.

-       Original is a white rum of 50% abv.

-       Classic Gold is a golden rum of 40% abv.

-       Spiced Gold is a spiced dark rum of 40% abv.


To obtain the desired alcohol volume, demineralised water is added to the distillate or the white Classic and Original rums
.


The Classic Gold, moreover, is the result of a maceration with wood chips.


The Spiced Gold, with a more complex flavour, has macerated wood chips, spices and citrus fruits

Fuzion range offers naturally macerated rum liqueurs of 37,5% abv in the flavours:

-       Calamondin (Citrus)

-       Lemongrass   

-       Ginger


Fresh fruit and spices from Domaine de Labourdonnais are harvestedcleaned and if necessary chopped before being dried at low temperatures.


They are then added to the Classic white rum of 40% abv and left to macerate for at least a month.


After maceration, the rum is filtered and sweetened with homemade sugar syrup prior to being bottled.
